How do I know which lens hood to buy?

The hood thread size is the same as the filter thread size, which is usually found on the inside of the lens cap: 52mm, 58mm, etc. Sometimes, you can find it on the lens itself, depending on the make. If the have the manuals for the lenses, you can also find it there.

Do I need a different lens hood for each lens?

Is it a one size fits all scenario? The simple answer to that is no, one size doesn’t fit all. You have to get the lens hood for your particular lens. For instance, I have the canon 24-105 zoom and the 16-35 zoom lenses and they both need different lens hoods.
