There is a key difference between vegans and (some, ex: me) vegetarians in this respect. Vegans are categorically against the consumption of animals and their proteins. It is is simply wrong and unethical, doesn’t matter where the animal comes from, how he lived his life and how he was slaugthered.

Also, my personal reasons for being vegetarian are more about sentient creatures with emotions and feelings than animals in general. If I wasn’t allergic to seafood, I might be pescatarian, and eat things like clams (not sentient), but not things like octopi (sentient and highly intelligent).
